This is the summary of a presentation given at the Joint Mathematics Meetings, January 10-13, 1996, Orlando, Florida.

Three of the MATLAB projects that I usually give, and the philosophy behind them, will be described. They are significant enough so that the students are given a week to work on them, and each has several mathematical principals that I hope the students will understand better upon completion.
